Gluten-Free Chocolate Orange-Juice Cheesecake: The delicious combination of Chocolate and Orange in a simple to make Cheesecake

[Mike] This recipe came about rather by accident: a lack of fresh oranges in the house made the move to frozen orange juice concentrate a move of desperation that resulted in taste sensation. In addition, it makes it much easier to make, since the need for fresh oranges has been removed.

The resulting combination of orange and chocolate is simply wonderful together, with a firm but creamy textured cheesecake that is sure to please.

We used variation of a cheesecake crust from our book, with just a few changes. Any favorite cheesecake crust will do: I tend to prefer ones featuring nut meals and/or coconut, as they tend to complement cheesecakes rather well.

Crust Ingredients and Instructions

Use the Turtle Cheesecake Crust instructions from page 34 of our Gluten-Free & Wheat-Free Gourmet Desserts cookbook with the following alterations to crust recipe: decrease nut meal to 1¼ cup, decrease butter to 3 tablespoons and add ¼ cup coconut flour. All other instructions/ingredients remain unchanged.

Cheesecake (Filling) Ingredients
1 Cup Sugar
8 Ounces Cream Cheese (1 package)
4 Eggs
2 Tablespoons Cornstarch
⅓ Cup Cocoa
½ Cup Sour Cream
1 Teaspoon Orange Extract
1 Teaspoon Vanilla
½ Cup Frozen Orange Juice Concentrate
1 Cup Semi-Sweet Chocolate Chips 

Directions

Cream sugar and cream cheese together. Add eggs, mix. Add cornstarch, cocoa and sour cream, mix. Add orange extract and vanilla, mix.

Microwave chocolate chips and frozen orange juice until chocolate chips are melted, stir. Add to cheesecake filling, mix.

Pour cheesecake filling over baked crust.

Bake in 325°F oven for 45 minutes or until filling is set.

Remove from oven and allow to cool. Refrigerate overnight (leave in springform pan) or until chilled. Remove from springform pan and serve.
