Gluten-Free Chocolate Ganache Cake (Variation): The definitive rich and dense chocolate cake — moistness and chocolate flavor are abundant, even without frosting!

This is a simple VARIATION to the Double Chocolate Ganache Cake recipe that appears on Pages 20-21 in our Gluten-Free and Wheat-Free Gourmet Desserts book.

The chocolate cake retains the wonderful moisture and flavor of the original, while introducing some flax meal to the mix for added fiber, Omega 3, and other healthful benefits. In addition, we baked this variation in a standard 9" x 13" x 2" cake pan, whereas the original (in our gluten-free cookbook) was baked using three 9" round pans and layering the cakes. The result of this variation makes for a simple and spectacular single-pan gluten-free birthday cake or other event cake (including having a cake just because you can!)

Ingredients Alterations

ALTER RECIPE ON PAGE 20 in our Cookbook AS FOLLOWS:

  • REDUCE Buttermilk to just 1 Cup
  • ADD 1 Cup Whole Milk
  • ADD ¼ Cup Ground Flax Seed (Flax Meal)

Directions Alterations

Use a single standard 9" x 13" x 2" cake pan (instead of the round pans used in original recipe), and increase the baking time to 50 minutes at 350°.

Comments [Mike]: I absolutely love this cake! My wife has created one of the best chocolate cakes ever (I would think this whether the cake was gluten-free or not). This cake variation gets rave reviews, just like the original, from both Celiac Disease sufferers and the rest of the population alike. I tend to request this chocolate cake for my own birthday every year too, since it satisfies my NEED for a great chocolate cake that I can not distinguish from the "real" thing. I hope you enjoy it!
