These buttermilk waffles make for an incredible glutenfree breakfast treat! Mild flavored and light bodied, featuring Millet and Flaxseed highlights. Delicious! You will need a waffle maker for these, and you will be happy you bought one if you do not already own one.

3 Eggs, Separated 1¾ Cups Buttermilk 4 Tablespoons Melted Butter 1 Tablespoon Baking Powder ¼ Teaspoon Salt 1 Tablespoon Sugar 1 Cup White Rice Flour ½ Cup Millet Flour ¼ Cup Glutinous Rice Flour ¼ Cup Tapioca Flour ¼ Cup Flaxseed Meal
Separate eggs, placing egg whites in mixing bowl and yolks in large bowl. Beat egg whites until stiff. Set aside for later use.
In bowl with egg yolks, add buttermilk; stir. Add melted butter; stir. Add baking powder, salt, sugar, flours and flaxseed meal; mix by hand until combined. Add this mixture to the bowl containing the beaten egg whites; gently fold (by hand) together.
To cook waffles, follow the instructions that came with your waffle maker, or the following generic version.
Generic instructions: surface of waffle maker griddle should be covered ⅔ of the way with batter (too much batter will cause the batter to leak from waffle maker). Waffles should be allowed to cook until steam stops escaping from waffle maker. We have a Black & Decker Belgian Waffle Maker (model WMB500) and waffles took 6-6.5 minutes to cook in this device.
The waffles should look similar to those in my picture (above) when finished (shown served with Maple Syrup), and they should taste as fantastic as they look!
