Gluten-Free "Whipped Cream" Frosting: Light and sweet, somewhat like whipped-cream.
Although it does not contain whipped cream or whipping cream, this vanilla frosting has a lightness that may remind you a bit of whipped cream.

Ingredients
1 Cup Milk 2 Heaping Tablespoons Cornstarch 1 Stick plus 3 Tablespoons Butter 1 Cup Sugar 1-2 Teaspoons Vanilla (to taste)
Directions
- Blend the cornstarch and milk, then cook over medium heat, stirring until thick. Set aside to cool.
- Beat the butter until smooth, add the sugar and continue beating until very smooth (no granules).
- Add vanilla and the cooled, thickened cornstarch and milk mixture.
- Beat until smooth and fluffy like whipped cream.
