This gluten free bread recipe produces a rather mild tasting bread that features the subtle taste of light buckwheat and flax. It is also dairy free, and uses SoyMilk for a bit of added protein.

1 Cup Plain Soymilk (used Silk Soy milk) 1 Cup Vegetable Oil (Canola, etc) 2 Eggs ¼ Cup Honey 2 Teaspoons Xanthan Gum 1½ Tablespoons Baking Powder ½ Teaspoon Salt 1½ Cups Light Buckwheat Flour ½ Cup Glutinous Rice Flour ¼ Cup Tapioca Flour 1 Cup White Rice Flour ¼ Cup Flaxseed Meal Cooking Spray for top Honey for top (optional)
In a large bowl, combine Xanthan Gum, baking powder, salt, flours, and flaxseed meal. Set aside for later use.
In mixing bowl, add soymilk, oil, eggs and honey, mix. Add dry ingredients from the large bowl, mix together. Pour bread batter into greased loaf pan (9 x 5 inch size) and spread it about evenly. Spray top of bread with cooking spray and drizzle with honey (optional). If desired, a basting brush can be used to smooth out the top of the bread (otherwise, the top of bread with have a rough appearance once baked).
Place in 350° preheated oven and cook for one hour. Remove from oven. Transfer bread to wire rack and allow to cool.
