1 Cup Plain Yogurt ½ Cup Buttermilk ½ Cup Vegetable Oil (such as Canola) 2 Eggs, Slightly Beaten (reserve 1 Tablespoon) ¼ Cup Honey 1½ Teaspoons Xanthan Gum 1 Teaspoon Yeast (for flavor) ½ Teaspoon Salt 1½ Tablespoons Baking Powder ½ Cup Teff Flour ½ Cup Glutinous Rice Flour ½ Cup Tapioca Flour 2 Cups White Rice Flour 1 Teaspoon Sesame Seeds (Optional) 1 Teaspoon Buckwheat Groats (Optional) 1 Teaspoon Milk (for egg wash)
In mixer, combine yogurt, buttermilk, oil, egg (reserve one Tablespoon for egg-wash), and honey; mix.
In large bowl, stir together Xanthan Gum, yeast, salt, baking powder and flours. Pour dry ingredients into mixer and mix completely. Place dough in greased standard-sized (9" x 5") bread loaf pan.
Take reserved 1 Tablespoon egg and add 1 teaspoon of milk; mix. Gently brush the egg wash on top of the bread (use all of the mixture). Sprinkle sesame seeds and/or Buckwheat Groats on top of bread (if desired) and place in 350°F preheated oven for 70 minutes. Remove from oven.
Remove bread from pan and transfer to wire rack to cool.
